Junior Hot Food Team Tryouts

Saturday, August 22, 2015

Culinary Institute of St. Louis
at Hickey College

Junior Chefs:

The Junior Hot Foods team is holding their annual tryouts on Saturday, August 22. The team competes annually with other Junior teams in the state for the honor of representing Missouri in the ACF Central Regional competition, held in the Spring.

The team usually consists of 4 members and an alternate, and is a GREAT WAY to IMPROVE YOUR SKILLS, interact with other Juniors and many professional chefs, and increase your exposure and marketability.

To try out for the team, you must bring everything you need to do the following tasks:

  • Cut up a chicken into 8 pieces
  • Perform 8 tournes of a vegetable, usually potato
  • Create 4 ounces of julienne'd vegetable, usually carrot
  • Peel and section one orange and display

Nominations for New Officers

Elections for the next term's Chefs de Cuisine chapter officers and junior officers will be held this fall. Chapter officers will serve a two-year term (2016 - 2017) while Junior officers will serve for 1 year (2016).

The chapter offices open for nomination are:

  • President
  • Vice-President
  • Treasurer
  • Secretary


Junior Offices are:

  • President
  • Vice-President
  • Secretary


Over the past several years, we have been blessed with enthusiastic and energetic officers. But we always need fresh faces to bring new ideas and new energy to our chapter. So, consider stepping up and getting more involved. Help shape the chapter and its activities by getting nominated and elected to one of the board positions.

Chef Chris Desens and Mark Williams have been named as Co-Chairpersons of the Nominations and Elections Committee. Nominations will be opened at the July meeting and will continue through September 30th. Self-nominations are encouraged.

If you are interested in serving on the Executive Board or Junior Board, or would like to nominate someone for office, attend the July meeting or contact Chef Desens or Mark. Tentatively, ballots will be mailed out to all professional and junior members in October and results announced at the November Educational meeting.

Junior Chef of the Year Application

Award Objective

The ACF Chefs de Cuisine Association of St. Louis Junior Chef of the Year award recognizes an up-and-coming junior chef member who possesses a high degree of professionalism, culinary skills, and passion for the culinary arts. The award is determined through a 3-step process:

  • Self-Nomination of Candidates for consideration for the award
  • Review of candidates by a Junior Chef of the Year Selection Committee and awarding two finalist positions
  • A sanctioned and judged competition to determine the winner of the award


Candidate Eligibility

Nominations should focus on a student who is a capable cook with a good skill level and who has a focus on solid cooking fundamentals that is based on a classical foundation. Candidate must be an ACF Chefs de Cuisine Association of St. Louis Junior Member, in good standing for at least six months by application deadline.

Nomination Package

A complete nomination package includes:

  • A completed application form (click here to download)
  • A two-page essay that includes why the junior chose the culinary profession, why he or she accepted the nomination, the student’s philosophy on food, and his or her three-year plan
  • A letter of commitment from the candidate agreeing to compete in the annual Junior Chef of the Year Competition
  • A letter of recommendation from an ACF Chefs de Cuisine Association of St. Louis Member in good standing or faculty member from a degree-granting culinary program


General Guidelines

  • Deadline for Application is August 1, 2015
  • Deadline is a received by date, not a postmarked by date.
  • Do not submit original documentation as they will not be returned.


Selection Committee

The ACF Chefs de Cuisine Association of St. Louis Board of Directors will be the award's Screening and Selection Committee. The committee will determine eligibility of candidates and select the two finalists for the competition.

Both finalists will compete in either a Category SK protein or SP1 hot dessert on October 4, 2015. A panel of judges will select the winner, based on cooking skills, menu, taste and professionalism. The first place recipient will be declared the winner. All decisions made by the Selection Committee and the Judging Panel are final and binding.

NOTE: Schedule conflicts will not be accommodated.

Chefs de Cuisine Fall Competition

Saturday and Sunday, October 3rd & 4th, 2015

Attention competitors

Save the date, October 3rd and 4th, for our annual fall culinary salon. We are offering a couple of new categories this year:

The two man mystery is back!  This is category F5. The rules can be found in the ACF Culinary Competition Manual (click here to download). In a nutshell it is a 2 man, 4 course, 10 portion mystery basket. It has been several years since we hosted a mystery basket competition, and if you haven’t competed in one, now is your chance. Pick your buddy, and start practicing.

Who is the greenest of chef of the all? There is a brand new category, KG (for green). This really is a neat concept and looks to be both challenging and fun. Again the rules can be found here (click here to download), but it is best described as a hybrid of a category K and mystery basket, with the ingredients being locally or sustainably produced.

In addition to these two categories, we will also be offering cold food categories A,B,C,D as well as a student categories SA, SB, SC, SD, SK1-9, and SP1, SP2n (click here to download Student Manual).

Entrance fees are:

  • F5 - $350
  • K’s and cold food - $100


These are ACF sanctioned competitions and medals will be presented.

It is rumored that prize money will be available as well…more details to come.

Change in Credit Card Processing Procedures

The Chefs de Cuisine website will no longer accept credit card payments for meetings and special events, as the processing fees used by the website processing provider were climbing. However, we will continue to accept credit card payments at the door for each event, using a moble card reader that has lower processing fees. For all future events, please bring your payment (credit card, cash, or check) with you to the event. Thank you for your understanding.

Well, we finally did it. Chefs de Cuisine is now on Facebook - amazingly before the decade was over !!! While this site will remain as our official website for news and event information, Facebook will give us an additional avenue for sharing information wih our members. Additional, Facebook is a much better  site for sharing photos. So though we will continue to post a few photos on this website, whole series of photos in photo albums will be available on Facebook.
